Extreme Home Makeover

Last night I felt like Ty Pennington from Extreme Home Makeover.

We have friends that just moved to Orlando and bought a house that needs to be completely renovated. I always wondered why home-buyers did that, and now I completely understand. There is something so special about being apart of creating a home to live in. There were about 10 of us that gathered and we got so much done in a little less than 3 hours. The boys took care of taking the tile out of the ground, while the girls painted three different rooms.I wish I had some before and after pictures to share, but I am still getting used to this whole documenting my life thing. 🙂

Before we went over there, we enjoyed this 5-ish ingredient/ 30 minute healthy and oh so scrumptious dish….



Butternut Squash Lentils

Butternut Squash and Lentil Soup

Ingredients:

  • 2 tsp olive oil
  • 1 yellow onion (diced)
  • 1 carton of Trader Joe’s Butternut Squash Soup
  • 2 ½ cups of lentils
  • 1 ½ tbsp of curry powder
  • 2 handfuls of Kale (chopped)
  • salt and pepper to taste

Directions:

  1. Place a large pot over medium heat and pour the oil onto the pot. Once hot, add the onions and saute for 5-6 minutes.
  2. Pour in the carton of butternut squash and bring to a boil.
  3. Add lentils and spices. Bring to a simmer, covered, and let it cook for 20-25 minutes.
  4. Add Kale and cook for another 5 minutes.
  5. Remove from heat and enjoy with crackers or tortilla chips on the side.

This morning I woke up early to get a quick run in before attending an educational training on a software called Boardmaker. I learned so much in this training and I cannot wait to use some activities I created today in my classroom next year!

  1. Hi there! I found your blog from Brittany’s (Delighted Mrs) so I wanted to say hi! 🙂 My husband and I bought a foreclosure in pitiful shape five years ago. It was totally unliveable when we bought it, but after 2 months of constant renovations we were finally able to move in! Just recently we’ve picked a couple of big projects to undertake in the house and we’re super excited to start the renovation process again! There’s something so fun about working together on your home. We love it! 🙂 Congrats to your friends on their new home!

      1. Va kul att man kan ladda ner din bok. Det var ju bara synd att 3 filer inte fungerade. Men när du har fixat dem, så naturligtvis tänker jag sätta in pengar på ditt Palk-yaponto. Du precis som ingen annan ska behöva jobba gratis.Nu har sonen något att lyssna på i bilen när vi åker på semester mot dina trakter. Hoppas du får lite tid över att läsa in de andra böckerna också.   2. this is exactly what Bryan and I are doing! Our house in Seminole needs to be completely gutted (new tile, new paint, new ceilings, and new kitchen. It’s a lot of work, but will be worth it in the end 🙂 we are excited!

    BTW I love your blog and all your healthy recipes. You are such an inspiration 🙂

  4. If I had the financial means to buy a house that had to be renovated, I think I would love it and really be able to put my own touch on my own home.

    2. And what part of your plan will make the schools safer when xmas break is over. I’m really curious to know what piece of legislation that will hit Washington in January will take the 300+ million guns and tons of ammo already out there and render them useless.Our first priority is to make the schools safe. We can argue what if any changes are needed in gunlaws after we make the kids safe.

  5. I really love this video, but I have an injury to my left knee. Some of the things might be too difficult because of the pain, like especially the &#;2708Child—s Pose” part.I love this video, though, and it’s very nice of you to put these instructions on You Tube. It’s difficult for me to get out of the house.
